Ingredients

1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

1/4 cup vegetable oil

2 large eggs

8 hotdogs (beef, pork, or plant-based)

1 cup shredded cheddar cheese (optional)

1/4 cup chopped green onions (optional)

Cooking spray or oil for greasing the pan

Instructions

Preheat your oven to 400°F (200°C). Grease a muffin tin or a mini loaf pan with cooking spray or oil.

    In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Mix well until dry ingredients are evenly blended.

      In another bowl, whisk together the buttermilk, vegetable oil, and eggs until smooth.

        Gradually add the wet ingredients to the dry ingredients, stirring until just combined (do not over-mix). If desired, fold in the shredded cheddar cheese and chopped green onions for additional flavor.

          Pour the cornbread batter into the prepared muffin tin or mini loaf pan, filling each cup about halfway.

            Insert a hotdog into the center of each cornbread cup, pushing it down gently until it's about halfway submerged in the batter.

              Bake in the preheated oven for 15-20 minutes, or until the cornbread is golden brown and a toothpick inserted into the batter (not touching the hotdog) comes out clean.

                Once baked, remove from the oven and allow them to cool for a few minutes before carefully removing the cornbread hotdogs from the pan.

                  Serve warm with your favorite toppings such as ketchup, mustard, or a sprinkle of more cheese, if desired.
