Ingredients

2 Cornish game hens (about 1.5 lbs each)

4 cloves garlic, minced

1 lemon, halved

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon paprika

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

1 cup low-sodium chicken broth

1 medium onion, quartered

2 carrots, chopped

2 stalks celery, chopped

2 tablespoons olive oil

Instructions

Prepare the Hens: Rinse the Cornish game hens under cold water and pat them dry with paper towels. Place them in a large mixing bowl.

    Make the Marinade: In a small bowl, combine the minced garlic, fresh herbs (rosemary and thyme), paprika, onion powder, salt, and pepper. Add olive oil and mix well to form a paste.

      Season the Hens: Rub the herb mixture all over the game hens, making sure to get it under the skin for maximum flavor. Squeeze the juice of one lemon half over each hen and place the lemon halves inside the cavity of the hens.

        Prepare the Slow Cooker: In the bottom of the slow cooker, arrange the chopped onions, carrots, and celery. This will serve as a flavorful bed for the hens.

          Add the Hens: Place the seasoned Cornish game hens on top of the vegetables in the slow cooker. Pour the chicken broth around the hens—this will keep them moist while they cook.

            Cook: Cover the slow cooker and set it on low heat for 4-5 hours or on high heat for 2-3 hours, until the hens are cooked through and the internal temperature reaches 165°F (75°C).

              Serve: Once cooked, carefully remove the hens from the slow cooker. Let them rest for a few minutes before carving. Serve the hens on a platter with the cooked vegetables and drizzled with some of the broth for extra flavor.
