Ingredients

2 Cornish game hens (about 1.5 lbs each)

4 tablespoons unsalted butter, softened

2 teaspoons fresh rosemary, chopped

2 teaspoons fresh thyme, chopped

2 teaspoons fresh parsley, chopped

4 cloves garlic, minced

1 lemon, zested and juiced

Salt and pepper, to taste

1 cup chicken broth

Fresh herbs for garnish (optional)

Instructions

Preheat your oven to 450°F (232°C).

    Rinse the Cornish game hens under cold water, pat them dry with paper towels, and place them breast-side up in a roasting pan.

      In a small bowl, combine the softened butter, chopped rosemary, thyme, parsley, minced garlic, lemon zest, lemon juice, salt, and pepper.

        Carefully loosen the skin from the breast of the hens using your fingers, creating pockets. Spread half of the herb-butter mixture evenly under the skin of each hen.

          Rub the remaining herb-butter mixture all over the skin of the game hens, ensuring they are well coated.

            Pour the chicken broth into the roasting pan around the hens. This will help to keep them moist during cooking.

              Roast the hens in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.

                Halfway through cooking, baste the hens with the pan juices to keep them moist and flavorful.

                  Once done, remove the hens from the oven and let them rest for about 10 minutes before carving. This allows the juices to redistribute.

                    Serve the Cornish game hens garnished with fresh herbs, alongside your favorite sides like roasted vegetables or potatoes.
