Ingredients

2 cups masa harina (corn dough)

1 cup water or broth (vegetable or chicken)

2 teaspoons baking powder

1 teaspoon salt

1 cup shredded cheese (such as queso fresco or Oaxaca cheese)

2 tablespoons melted butter or vegetable shortening

Banana leaves (for wrapping)

Optional: Salsa for serving

Instructions

Prepare the Masa: In a large mixing bowl, combine the masa harina, baking powder, and salt. Gradually add water or broth while mixing until a smooth dough forms. The masa should be soft but not sticky.

    Incorporate Butter: Add the melted butter or shortening and knead the masa for a few minutes until well incorporated and pliable.

      Shape the Corundas: Tear pieces of banana leaf into squares approximately 8x8 inches (you will need about 8-10 pieces). Take a small amount of masa (about 1/4 cup) and shape it into a triangle, then place a tablespoon of shredded cheese in the center. Fold the sides of the masa triangle over the cheese and then wrap it in the banana leaf, securing it tightly.

        Steam the Corundas: Prepare a steamer by filling it with water and setting it on medium heat. Once the water is boiling, place the wrapped corundas in the steamer, making sure they are upright. Cover and steam for about 45 minutes or until the masa is firm and fully cooked.

          Serve: Carefully unwrap the corundas and serve them hot, optionally drizzled with your favorite salsa.
