Ingredients

2 cups cottage cheese (preferably low-fat)

1 large apple (such as Granny Smith or Honeycrisp), diced

1/2 cup walnuts, chopped

1/4 cup dried cranberries or raisins

2 tablespoons honey or maple syrup

1 teaspoon cinnamon

1 tablespoon lemon juice

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Instructions

In a large mixing bowl, combine the cottage cheese and lemon juice. Stir gently to combine.

    Add the diced apple, chopped walnuts, and dried cranberries to the bowl with the cottage cheese.

      Drizzle the honey (or maple syrup) over the mixture and sprinkle with cinnamon. Season with a pinch of salt and pepper.

        Gently fold all the ingredients together until well combined, being careful not to mash the cottage cheese.

          Taste and adjust the sweetness or seasoning if needed.

            Transfer the salad to a serving bowl or individual dishes, and garnish with fresh mint leaves if desired.
