Ingredients

1 cup cottage cheese (preferably low-fat)

1 large cucumber, diced (seeded if desired)

1/2 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)

2 tablespoons olive oil

1 tablespoon apple cider vinegar

Optional: 1/4 cup black olives, sliced

Optional: 1 tablespoon lemon juice

Prepare the Vegetables: Start by washing and dicing the cucumber. If you prefer a milder flavor, you can peel it. Cut the cherry tomatoes in half and finely chop the red onion.

    Mix the Base: In a large mixing bowl, add the cottage cheese along with the diced cucumber, halved cherry tomatoes, red onion, and chopped dill.
