Ingredients

2 cups fresh spinach leaves, washed and dried

1 cup cottage cheese (preferably low-fat)

1/2 cup cherry tomatoes, halved

1/4 cup diced cucumber

1/4 cup red onion, thinly sliced

1/4 cup walnuts, roughly chopped

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey or maple syrup

Salt and pepper to taste

Fresh basil or mint leaves for garnish (optional)

Instructions

In a large mixing bowl, combine the fresh spinach leaves, cherry tomatoes, diced cucumber, and red onion.

    In a separate bowl, prepare the dressing by whisking together olive oil, apple cider vinegar, honey (or maple syrup), and a pinch of salt and pepper until emulsified.

      Pour the dressing over the salad mix and gently toss until the spinach and vegetables are evenly coated.

        Spoon the cottage cheese over the top of the salad mixture.

          Sprinkle the chopped walnuts for a crunchy texture and garnish with fresh basil or mint leaves, if using.

            Serve immediately for the freshest taste, or chill in the fridge for about 15-30 minutes before serving to allow the flavors to meld.
