Ingredients

1 cup cottage cheese (low-fat or regular)

4 large eggs

1/2 cup shredded cheddar cheese (or any cheese of your choice)

1/2 cup fresh spinach, chopped (or any greens you prefer)

1/4 cup diced bell pepper (any color)

1/4 cup finely chopped onion

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon smoked paprika (optional)

Cooking spray or olive oil for greasing

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Prepare a muffin tin by spraying it lightly with cooking spray or brushing with olive oil to prevent sticking.

    Blend the Base: In a blender or mixing bowl, combine the cottage cheese and eggs. Blend or whisk until smooth and well combined.

      Add Veggies and Seasoning: Stir in the cheddar cheese, chopped spinach, diced bell pepper, and onion. Season the mixture with salt, black pepper, garlic powder, and smoked paprika. Mix well until everything is evenly distributed.

        Fill the Muffin Tin: Pour the mixture evenly into the prepared muffin tin, filling each cup about 2/3 full. This will allow the egg bites to puff up slightly while baking.

          Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg bites are set in the center and lightly golden on top.

            Cool and Serve: Once baked, remove the muffin tin from the oven and let it cool for a few minutes. Carefully run a knife around the edges to loosen the egg bites, then gently pop them out.

              Store or Serve: Enjoy immediately, or allow them to cool completely before storing in an airtight container in the refrigerator for up to 4 days.
