Ingredients

6 large eggs

1/4 cup buttermilk

2 tablespoons unsalted butter

Salt and freshly ground black pepper, to taste

1 tablespoon fresh chives, finely chopped (optional)

1 tablespoon fresh parsley, finely chopped (optional)

Instructions

In a large mixing bowl, crack the eggs and add the buttermilk. Use a whisk or fork to beat the mixture until the eggs are completely blended and frothy.

    Heat a non-stick skillet over medium-low heat and add the butter. Allow it to melt and bubble slightly, being careful not to let it brown.

      Pour the egg mixture into the skillet and immediately reduce the heat to low. Use a spatula to gently stir the eggs continuously, scraping the skillet's bottom and sides.

        Continue cooking for about 4-5 minutes, or until the eggs are soft and slightly runny but starting to set. Remember, they'll continue to cook off the heat.

          Season with salt and pepper to taste. If desired, fold in the fresh chives and parsley for added flavor.

            Remove the scrambled eggs from the heat when they are still slightly creamy and serve immediately. Enjoy them with toast or your favorite breakfast sides!
