Ingredients

2 cups rolled oats

1 ½ cups milk (dairy or plant-based)

1 cup canned pumpkin puree

½ cup brown sugar (or maple syrup)

2 large eggs

1 tsp vanilla extract

1 ½ tsp pumpkin pie spice

½ tsp cinnamon

1 tsp baking powder

½ tsp salt

½ cup chopped nuts (walnuts or pecans)

½ cup raisins or dried cranberries (optional)

¼ cup maple syrup (for drizzling on top, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.

    Mix Wet Ingredients: In a large mixing bowl, whisk together the milk, pumpkin puree, brown sugar, eggs, and vanilla extract until well blended.

      Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt.
