Ingredients

1 cup cottage cheese (low-fat or full-fat)

6 oz fresh crab meat (lump crab recommended)

1/4 cup diced red bell pepper

1/4 cup diced cucumber

1/4 cup corn (cooked)

2 green onions, sliced

1 tablespoon fresh dill (or 1 teaspoon dried dill)

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: avocado slices for garnish

Optional: hot sauce or sriracha for a kick

Instructions

In a large mixing bowl, combine the cottage cheese, crab meat, and diced red bell pepper. Gently fold the ingredients together to avoid breaking the crab meat.

    Add in the diced cucumber, corn, and sliced green onions. Stir until everything is well mixed.

      In a small bowl, whisk together the lemon juice, Dijon mustard, dill, salt, and pepper until smooth. Pour this dressing over the crab mixture.

        Carefully fold the dressing into the crab mixture until evenly coated.

          Taste and adjust seasoning if necessary by adding more salt, pepper, or hot sauce for heat.
