  • 4 pieces boneless skinless chicken breasts
  • 1 cup uncooked angel hair pasta
  • 10.5 oz cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 1 cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • to taste salt and freshly ground black pepper
  • 1 cup frozen mixed vegetables
  • 1 tablespoon olive oil
  • ½ cup panko breadcrumbs
  • to garnish fresh parsley finely chopped

Instructions

  • Preheat your oven to 350°F (175°C).
  • Cook the angel hair pasta in salted boiling water for 2 minutes less than package instructions, then drain.
  • In a skillet, heat olive oil and cook seasoned chicken breasts for 5-7 minutes on each side until golden brown.
  • Remove chicken from heat, let cool slightly, and shred using two forks.
  • Mix cream of mushroom soup, sour cream, chicken broth, and thyme in a bowl until smooth.
  • Fold in shredded chicken, cooked pasta, and mixed vegetables until well combined.
  • Transfer mixture to a greased 9x13 inch baking dish and top with panko breadcrumbs if desired.
  • Sprinkle shredded cheddar cheese on top.
