Ingredients

8 oz fettuccine pasta

2 boneless, skinless chicken breasts

1 tablespoon Cajun seasoning

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1/2 cup cherry tomatoes, halved

Salt and pepper to taste

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.

    Season the Chicken: While the pasta is cooking, rub the Cajun seasoning all over the chicken breasts to coat them evenly.

      Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and no longer pink in the center.
