Ingredients

1 medium head of cauliflower, chopped into florets

2 tablespoons unsalted butter

1/2 cup heavy cream or milk (for a lighter version)

2 cloves garlic, minced

Salt and pepper to taste

1/4 cup grated Parmesan cheese (optional for added flavor)

Fresh chives or parsley for garnish

Instructions

Prepare the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 10-12 minutes, or until they are fork-tender.

    Sauté the Garlic: While the cauliflower is cooking, in a small pan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to let it burn.

      Drain and Blend: Once the cauliflower is cooked, drain it well and return it to the pot. Add the sautéed garlic and butter, and pour in the heavy cream (or milk).

        Mash it Up: Using a potato masher or an immersion blender, mash or blend the cauliflower mixture until smooth and creamy. If you prefer a chunkier texture, mash to your liking.

          Season and Add Cheese: Stir in the grated Parmesan cheese (if using) and season with salt and pepper to taste. Mix until well-combined.

            Garnish and Serve: Serve the creamy cauliflower mash hot, garnished with chopped chives or parsley for a touch of brightness.
