Ingredients

1 lb boneless, skinless chicken breasts, diced

1 cup orzo pasta

2 cups broccoli florets

1 medium onion, chopped

4 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, seasoning it with salt, pepper, and Italian seasoning. Cook until the chicken is golden and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

Cook the Onions and Garlic: In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the Broccoli and Orzo: Stir in the broccoli florets and orzo pasta, mixing well with the onions and garlic. Cook for about 2 minutes, letting everything get familiar.

Pour in the Broth: Carefully add the chicken broth to the skillet and bring it to a simmer. Reduce the heat to low, cover the skillet, and let it cook for about 10-12 minutes or until the orzo is tender and broccoli is bright green.

Make it Creamy: Once the orzo is cooked, add the heavy cream and grated Parmesan cheese to the skillet. Stir until the cheese is melted and the mixture is creamy. Add the cooked chicken back in, mixing everything together, and let it heat through for another 2-3 minutes.

Serve: Taste and adjust seasoning if necessary. Remove from heat and garnish with freshly chopped parsley before serving.
