4 cups low-sodium chicken broth

1 cup heavy cream

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

Sauté the Vegetables: Begin by heating the olive oil in a large, heavy-bottomed pot over medium heat. Once hot, add the finely diced onion, minced garlic, diced carrots, and celery. Sauté these vegetables for approximately 5-7 minutes, stirring occasionally, until they are softened and the onion has turned translucent.

    Cook the Chicken: To the sautéed vegetables, add the diced chicken thighs. Stir the mixture to ensure the chicken is fully coated with the oil and vegetables.
