Ingredients

  • 2 cups cooked shredded chicken
  • 1 can 15 oz black beans, thoroughly rinsed and drained
  • 1 can 14.5 oz diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 cup corn kernels fresh or frozen
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 cup heavy cream
  • to taste salt
  • to taste freshly ground black pepper
  • to garnish fresh cilantro chopped
  • for serving tortilla chips

Instructions

  • In a large pot, heat a splash of oil over medium heat.
  • Add the diced onion and minced garlic, sauté until the onion is translucent, about 3-5 minutes.
  • Incorporate the chicken, black beans, diced tomatoes, chicken broth, corn, chili powder, and cumin.
  • Stir everything together until well combined.
  • Bring the mixture to a gentle boil, then reduce heat and simmer for 15 minutes.
  • Stir in the heavy cream, and season with salt and pepper to taste.
  • Heat through for an additional 5 minutes.
  • Remove from heat and let cool for a few minutes before serving.
