Creamy Chicken Lasagna with White Sauce

Ingredients

9 lasagna noodles

2 cups cooked, shredded chicken breast

2 cups ricotta cheese

2 cups mozzarella cheese, shredded

1 cup Parmesan cheese, grated

4 cups spinach, fresh

1 medium onion, finely chopped

3 cloves garlic, minced

4 tablespoons butter

4 tablespoons all-purpose flour

4 cups whole milk

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Noodles: Boil the lasagna noodles according to package instructions. Drain and set aside.

      Make the White Sauce: In a large saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent. Stir in the flour and cook for about 1 minute. Gradually whisk in the milk, stirring consistently until the mixture thickens. Add Italian seasoning, salt, and pepper to taste. Remove from heat.

        Combine Chicken and Spinach: In a large bowl, combine the shredded chicken and fresh spinach. Mix in 1 cup of the white sauce to keep the mixture moist.

          Assemble the Lasagna: Spread a thin layer of white sauce on the bottom of a 9x13 inch baking dish to prevent sticking. Layer three lasagna noodles over the sauce, then spread half of the chicken and spinach mixture on top. Add a layer of ricotta cheese, followed by a sprinkle of mozzarella cheese. Repeat the layers, finishing with a final layer of noodles and the remaining white sauce. Top with the remaining mozzarella and Parmesan cheeses.

            Bake: Cover the baking dish loosely with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

              Let It Rest: Once baked, remove the lasagna from the oven and let it rest for about 10 minutes before slicing. This will help the layers set.
