Ingredients

1 lb chicken sausage, sliced

1 cup orzo pasta

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

2 cups low-sodium chicken broth

1 cup heavy cream

1 cup spinach, roughly chopped

1 tsp Italian seasoning

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions

Heat the olive oil in a large skillet over medium heat. Add the sliced chicken sausage and sauté until browned, about 5 minutes.

    Add the diced onion and bell pepper to the skillet, cooking until they are softened, about 3-4 minutes. Stir in the minced garlic and Italian seasoning, cooking for another minute until fragrant.

      Pour in the chicken broth and bring to a gentle simmer. Add the orzo pasta and stir to combine. Cook for about 10 minutes, stirring occasionally, until the orzo is al dente and has absorbed most of the liquid.

        Reduce the heat to low and stir in the heavy cream and chopped spinach. Continue to cook for another 2-3 minutes, until the spinach wilts and the mixture is creamy.

          Remove the skillet from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
