4 cups fresh ripe tomatoes, chopped (or 2 cans of whole peeled tomatoes)

1 medium onion, diced

2 cloves garlic, minced

1 cup chopped carrots

1 cup chopped celery

1 cup vegetable or chicken broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon sugar (to balance acidity)

Salt and pepper to taste

Instructions

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onions, and sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

    Add Carrots and Celery: Stir in the chopped carrots and celery. Cook for another 5 minutes, letting the vegetables soften a bit.

      Incorporate Tomatoes: Add the chopped fresh tomatoes (or whole canned tomatoes) to the pot. If using canned tomatoes, crush them a little with the back of a spoon.

        Add Broth and Seasoning: Pour in the vegetable or chicken broth. Add the dried basil, sugar, salt, and pepper. Stir to combine everything well.

          Simmer: Bring the mixture to a gentle boil, then reduce heat and let it simmer uncovered for about 20 minutes. This allows the flavors to meld beautifully.
