  • 3 ripe bananas thoroughly mashed
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • cup unsalted butter melted and slightly cooled
  • 1 large egg beaten
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • a pinch salt
  • 1 ½ cups all-purpose flour
  • ½ teaspoon ground cinnamon
  • 4 oz cream cheese softened to room temperature
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract for cream cheese filling
  • ½ cup chopped walnuts or pecans optional

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a large bowl, combine mashed bananas, granulated sugar, brown sugar, and melted butter until smooth.
  • Mix in the beaten egg and 1 teaspoon of vanilla extract until uniform.
  • Sprinkle baking soda and salt over the mixture, then stir to combine.
  • Fold in the all-purpose flour gently until just combined, leaving some lumps.
  • In a separate bowl, whip cream cheese, powdered sugar, and ½ teaspoon vanilla extract until smooth.
  • Pour half of the banana batter into the loaf pan, then dollop the cream cheese mixture on top.
  • Spread the remaining banana batter over the cream cheese layer.
  • Swirl the batter with a knife to create a marbled effect without over-mixing.
  • Bake for 55-65 minutes until a toothpick comes out clean, then cool in the pan for 10 minutes before transferring to a wire rack.
