  • 4 large russet potatoes peeled and diced into 1-inch cubes
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese shredded
  • ½ cup cooked bacon crumbled
  • ½ cup sour cream
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon smoked paprika
  • ¼ cup green onions sliced

Instructions

  • In your crockpot, add the diced russet potatoes, chopped onion, minced garlic, and broth. Stir to combine.
  • Sprinkle in the salt, black pepper, and smoked paprika, mixing again. Cover and set to low for 6-8 hours or high for 3-4 hours.
  • Once the potatoes are cooked, mash or blend the soup to your preferred consistency.
  • Incorporate the heavy cream, shredded cheddar cheese, crumbled bacon, and sour cream. Stir until the cheese melts.
  • Taste and adjust seasoning if necessary. Add more broth or milk for desired consistency.
  • Serve hot, garnished with extra cheddar cheese, crumbled bacon, sliced green onions, and sour cream.

Notes

For a thicker soup, blend more thoroughly or add less broth.
