1 pound rotini pasta

1 pound chicken breast, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon zest (optional, for brightness)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the rotini according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté the Chicken: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the chicken pieces, seasoning them with salt and pepper. Cook until golden brown and fully cooked, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Garlic Butter: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant, taking care not to burn it.

        Create the Sauce: Lower the heat to medium, then pour in the heavy cream, stirring to combine. Add the grated Parmesan cheese and Italian seasoning, whisking until the cheese has melted and the sauce is smooth. Adjust the thickness by adding some reserved pasta water if necessary.

          Combine: Add the sautéed chicken and cooked rotini into the sauce, tossing everything to coat evenly. Cook for an additional 2-3 minutes on low heat, allowing the flavors to meld together.
