Ingredients

1 lb (450g) rotini pasta

1 lb (450g) boneless, skinless chicken breasts, diced

4 tablespoons unsalted butter

5 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

1/2 teaspoon red pepper flakes (optional for heat)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Prepare the Chicken: Season the diced chicken with salt, pepper, and Italian seasoning. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chicken and cook for about 6-8 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant.

        Create the Cream Sauce: Reduce the heat to low and pour in the heavy cream, stirring continuously. Gradually add the grated Parmesan cheese, mixing until smooth and creamy. If the sauce is too thick, add some of the reserved pasta water to reach your desired consistency.

          Combine: Return the cooked chicken to the skillet and add the drained rotini. Stir well to combine and coat everything in the creamy sauce. Taste and adjust seasoning with additional salt, pepper, or red pepper flakes if using.
