Ingredients

8 oz penne pasta

1 lb chicken breast, diced

2 cups asparagus, trimmed and cut into 2-inch pieces

2 cups mushrooms, sliced (cremini or button)

1 medium onion, diced

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp dried thyme

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Penne: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Season the diced chicken with salt and pepper, then add to the skillet. Sauté until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add diced onions and cook until translucent, about 3-4 minutes. Add the minced garlic, sliced mushrooms, and asparagus pieces. Sauté until the mushrooms are golden brown and the asparagus is tender, about 5-6 minutes.

        Make the Sauce: Reduce the heat to medium and pour in the chicken broth, stirring to combine. Bring to a simmer, then add the heavy cream, Parmesan cheese, thyme, and red pepper flakes if using. Cook for another 3-4 minutes, stirring constantly until the sauce is well combined and slightly thickened.

          Combine Everything: Return the cooked chicken to the skillet, add the drained penne, and gently toss to combine all the ingredients. Cook for another 2-3 minutes until heated through. Taste and adjust seasoning with salt and pepper as needed.

            Serve: Garnish with chopped fresh parsley. Serve hot and enjoy your creamy and comforting meal!
