Ingredients

12 oz (340 g) pasta of choice (penne or fusilli work well)

2 pints cherry tomatoes

1 tablespoon olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

1 cup heavy cream

1/2 cup grated Parmesan cheese (plus more for serving)

Fresh basil leaves, for garnish

Instructions

Preheat your oven to 400°F (200°C).

    On a large baking sheet, toss the cherry tomatoes with olive oil, minced garlic, dried oregano, dried basil, red pepper flakes (if using), salt, and pepper. Make sure the tomatoes are well-coated in the mixture.

      Roast the tomatoes in the preheated oven for 20-25 minutes, until they burst and caramelize slightly.

        While the tomatoes are roasting, cook the pasta according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

          In a large skillet over medium heat, combine the roasted tomatoes (with any juices from the baking sheet) and heavy cream. Stir to combine and bring to a gentle simmer.

            Add the cooked pasta to the skillet, tossing to coat in the creamy tomato sauce. If the sauce is too thick, gradually add reserved pasta water until desired creaminess is achieved.

              Stir in the grated Parmesan cheese until melted and well-integrated into the sauce. Adjust seasoning with more salt and pepper if desired.

                Serve immediately, garnished with fresh basil leaves and additional Parmesan cheese on top.
