Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz sweet corn, drained
  • 1 can 14.5 oz diced tomatoes with green chilies
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • Fresh cilantro chopped (for garnish)
  • Crispy tortilla strips for garnish
  • Lime wedges for serving

Instructions

  • Place the boneless chicken breasts at the bottom of the slow cooker.
  • Layer the diced onion, minced garlic, black beans, corn, and diced tomatoes over the chicken.
  • Pour the chicken broth over the top and sprinkle in the spices.
  • Stir gently to ensure the spices are evenly distributed.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Remove the chicken, shred it, and return it to the soup.
  • Stir in the heavy cream and shredded cheddar cheese until melted.
