Ingredients

  • 4 large russet potatoes peeled and thinly sliced
  • 2 large onions cut into rings
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • Fresh parsley finely chopped (for garnish)

Instructions

  • Peel and thinly slice the russet potatoes and slice the onions into rings.
  • In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat.
  • Add the sliced onions and sauté until soft and translucent, about 5-7 minutes.
  • Remove half of the onions and layer half of the sliced potatoes on top of the remaining onions.
  • Season the potatoes with garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Pour half of the chicken broth and half of the heavy cream over the first layer of potatoes.
  • Add the reserved sautéed onions on top, followed by the remaining sliced potatoes and season again.
  • Pour the rest of the broth and cream over everything and bring to a gentle simmer.
  • Reduce heat to low, cover, and cook for 30-35 minutes until potatoes are tender.
  • Stir in the remaining 2 tablespoons of butter and garnish with freshly chopped parsley before serving.

Notes

For a richer flavor, serve in a cast-iron skillet.
