Ingredients

  • 12 oz spaghetti
  • 2 cups fresh spinach roughly chopped
  • 1 cup sun-dried tomatoes packed in oil, drained and diced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 3 cloves garlic finely minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and freshly cracked black pepper to taste
  • Fresh basil leaves for garnish

Instructions

  • In a large pot, bring salted water to a rolling boil and cook spaghetti until al dente.
  • Reserve 1 cup of pasta cooking water, then drain spaghetti and set aside.
  • In a large skillet over medium heat, heat olive oil and sauté minced garlic until fragrant.
  • Add chopped sun-dried tomatoes and cook for another 2-3 minutes.
  • Lower heat, pour in heavy cream, and add dried basil and oregano; simmer for 3-4 minutes.
  • Toss in chopped spinach and stir until wilted, about 2 minutes.
  • Add drained spaghetti to the skillet and toss to coat, adding reserved pasta water as needed.
  • Stir in freshly grated Parmesan cheese until melted and season with salt and pepper.
  • Plate the spaghetti and garnish with fresh basil leaves before serving.
