Ingredients

  • 8 oz fettuccine pasta
  • 2 boneless skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic finely minced
  • 1 cup cherry tomatoes halved
  • 1 cup fresh spinach leaves
  • 1 cup heavy whipping cream
  • ½ cup freshly grated Parmesan cheese
  • Salt and freshly cracked black pepper to taste
  • Fresh basil leaves for garnish

Instructions

  • Cook the fettuccine pasta according to package directions until al dente, then drain and set aside.
  • Season both sides of the chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat and cook chicken for 6-7 minutes on each side until cooked through.
  • Remove chicken from skillet and let it rest on a cutting board.
  • In the same skillet, reduce heat to medium and sauté minced garlic for about 1 minute until fragrant.
  • Add halved cherry tomatoes and spinach, cooking for 3-4 minutes until spinach wilts and tomatoes soften.
  • Pour in heavy cream and mix well, then gradually add Parmesan cheese, stirring until melted and slightly thickened.
  • Slice the rested chicken and return it to the skillet, mixing with the sauce.
  • Add cooked fettuccine to the skillet and toss to coat with the sauce.
  • Serve hot, garnished with fresh basil leaves.

For a richer flavor, consider adding more Parmesan cheese or a splash of white wine to the sauce.
