Ingredients

4 salmon fillets (6 oz each)

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 tablespoon lemon juice

Fresh basil leaves, for garnish

Instructions

Prepare the Salmon: Season the salmon fillets with salt and pepper on both sides.

    Sear the Salmon: Heat olive oil in a large skillet over medium heat. Add the salmon fillets, cooking for about 4-5 minutes on each side, until cooked through and golden brown. Remove the salmon from the skillet and set aside.

      Make the Sauce: In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add cherry tomatoes and cook for 3-4 minutes until they start to soften.

        Add Spinach: Stir in the baby spinach and cook until wilted, about 1-2 minutes.

          Create Creamy Mixture: Lower the heat and add heavy cream to the skillet, followed by grated Parmesan cheese and Italian seasoning. Stir until the cheese is melted and the sauce is creamy.

            Finish with Lemon: Stir in the lemon juice and season the sauce with additional salt and pepper to taste.

              Combine: Return the salmon fillets to the skillet, spooning the creamy sauce over the top. Cook for another 2 minutes to allow the flavors to meld.

                Serve: Garnish with fresh basil leaves and serve immediately with a side of garlic bread or over pasta.
