Ingredients

  • 2 cans 15 oz each white beans (cannellini or great northern), rinsed and drained
  • 3 cups chicken broth
  • 2 cups cooked chicken shredded
  • 1 can 4 oz diced green chiles
  • 1 cup corn
  • Salt and freshly ground black pepper to taste
  • 1 lime Juice of
  • Fresh cilantro chopped (for garnish)
  • Optional toppings: sour cream diced avocado, shredded cheese, tortilla chips

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Sauté chopped onion for about 5 minutes until translucent.
  • Add minced garlic and cook for 1 minute until fragrant.
  • Stir in cumin, chili powder, smoked paprika, and cayenne pepper, cooking for 1 minute.
  • Add white beans, chicken broth, shredded chicken, green chiles, and corn, mixing well.
  • Bring to a gentle simmer, then reduce heat and cook uncovered for 20-25 minutes.
  • Season with salt and pepper, then stir in lime juice before serving.
