Ingredients

2 ribeye steaks (about 1 inch thick)

1 cup jasmine rice (or your choice of rice)

2 cups beef broth (or water)

1 red bell pepper, sliced

1 avocado, sliced

1 cup cherry tomatoes, halved

1 cup fresh baby spinach

1 cup corn (fresh or frozen)

½ cup black beans, rinsed and drained

1 lime, juiced

3 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sriracha or your favorite hot sauce (optional)

Instructions

Prepare the Rice: In a medium saucepan, combine the jasmine rice and beef broth (or water). Bring to a boil, then reduce heat to low, cover, and simmer for about 15-18 minutes until the liquid is absorbed. Fluff with a fork and set aside.

    Season the Steaks: While the rice is cooking, season the ribeye steaks generously with salt, pepper, smoked paprika, and garlic powder on both sides.

      Cook the Steaks: Heat 2 tablespoons of olive oil in a cast-iron skillet or grill pan over medium-high heat. Once hot, add the steaks. Cook for about 4-5 minutes on each side for medium-rare, depending on thickness and desired doneness. Remove from the pan, cover loosely with foil, and let rest for 5 minutes.

        Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell pepper and corn, and sauté for about 3-4 minutes until they are slightly charred and tender. Stir in the black beans and spinach; cook until the spinach is wilted, about 1-2 more minutes. Season with salt and pepper as needed.

          Assemble the Bowl: Slice the rested steaks against the grain into thin strips. In a large bowl or individual serving bowls, start with a base of fluffy rice. Top with the sautéed vegetables, sliced steak, cherry tomatoes, and avocado.

            Dress the Bowl: Drizzle the bowl with fresh lime juice and garnish with chopped cilantro. Add a splash of Sriracha or your favorite hot sauce for an extra kick if desired.
