Ingredients

  • 8 pieces rice paper wrappers
  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 1 cup bean sprouts
  • ½ cup bell peppers thinly sliced
  • ½ cup mushrooms finely chopped
  • 2 tablespoons green onions chopped
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • to taste salt and freshly ground black pepper
  • as needed cooking spray

Instructions

  • In a large mixing bowl, combine the shredded carrots, cabbage, bean sprouts, bell peppers, mushrooms, and green onions.
  • Add soy sauce, rice vinegar, garlic powder, ginger powder, salt, and pepper. Stir to mix well.
  • Soak one rice paper wrapper in warm water for 10-15 seconds until soft.
  • Place the softened wrapper on a clean surface and add 2 tablespoons of filling near the bottom.
  • Fold the sides inward and roll tightly from the bottom to the top.
  • Repeat with remaining wrappers and filling.
  • Preheat air fryer to 375°F (190°C) and mist spring rolls with cooking spray if desired.
  • Arrange spring rolls in a single layer in the air fryer basket.
  • Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  • Serve warm with dipping sauce.
