Ingredients

1 lb chicken breasts, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp cayenne pepper (adjust to taste)

Vegetable oil for frying

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (adjust for spice preference)

1 tsp lime juice

1 tsp honey (optional for sweetness)

1 green onion, finely chopped (for garnish)

Instructions

Marinate the Chicken: In a bowl, soak the chicken pieces in buttermilk for at least 30 minutes to tenderize and flavor the meat.

    Prepare the Coating: In a shallow dish, combine the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper. In another dish, place the panko breadcrumbs.

      Coat the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece first in the flour mixture, shaking off any excess, then dip it back into the buttermilk, and finally coat it with the panko breadcrumbs, pressing gently to adhere.

        Heat the Oil: In a deep skillet or pot, heat about 2 inches of vegetable oil over medium-high heat. To check if the oil is hot enough, drop a small piece of breadcrumb in – it should sizzle immediately.

          Fry the Chicken: Carefully add the coated chicken pieces to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 4-5 minutes, or until golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil.

            Make the Bang Bang Sauce: In a bowl, mix together the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey (if using). Stir until well combined.

              Serve: Toss the fried chicken pieces in the Bang Bang sauce or serve it on the side for dipping. Garnish with chopped green onions.
