Ingredients

1 lb salmon fillet, skinless and boneless

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Oil for frying (canola or vegetable oil)

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha sauce (adjust to taste)

1 teaspoon lime juice

Chopped green onions, for garnish

Instructions

Prepare the Salmon: Cut the salmon fillet into bite-sized pieces (about 1-inch cubes). Pat them dry with a paper towel and season with salt and pepper.

    Set Up Dredging Station: In three separate bowls, prepare your dredging station:

      - Bowl 1: Add flour mixed with garlic powder, onion powder, smoked paprika, salt, and pepper.

        - Bowl 2: Beat the two eggs together.

          - Bowl 3: Pour in the panko breadcrumbs.

            Coat the Salmon:

              - Dip each salmon piece into the flour mixture, ensuring it gets coated well.

                - Shake off any excess, then dip the piece into the beaten egg.

                  - Finally, roll the salmon in the panko breadcrumbs pressing gently to adhere. Repeat with all pieces.

                    Heat the Oil: In a large frying pan, heat about 1/2 inch of oil over medium-high heat until it shimmers. To test, drop a panko crumb into the oil; if it sizzles, the oil is ready.

                      Fry the Bites:

                        - Carefully place a few salmon bites in the hot oil (don't overcrowd the pan). Fry for about 2-3 minutes on each side or until golden brown and crispy.

                          - Use a slotted spoon to transfer the cooked bites to a plate lined with paper towels to absorb excess oil.

                            Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix well until smooth.

                              Serve: Serve the crispy salmon bites warm with the Bang Bang sauce on the side for dipping. Garnish with chopped green onions.
