Crispy Bang Bang Salmon Bites

Ingredients

1 lb fresh salmon fillet, skinless and boneless

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

Optional: chopped green onions or sesame seeds for garnish

Instructions

Prep the Salmon: Cut the salmon fillet into bite-sized pieces, about 1-2 inches. Pat them dry with paper towels. This will help them become crispy when cooked.

    Set Up Breading Station: In three separate bowls, place the flour in the first bowl. In the second bowl, beat the eggs. In the third bowl, combine the panko breadcrumbs, garlic powder, paprika, salt, and pepper.

      Bread the Salmon: Dip each salmon piece first into the flour, shaking off any excess. Next, coat it in the beaten egg, letting any extra drip off. Finally, roll it in the panko mixture, pressing gently to ensure an even coating.

        Make the Bang Bang Sauce: In a small mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix until smooth and well combined. Adjust the sriracha according to your spice preference.

          Heat Oil: In a large skillet, heat about 1/4 inch of oil over medium-high heat. To check if the oil is hot enough, drop a small piece of breadcrumb into the oil; it should sizzle and bubble.

            Fry the Bites: Carefully place the breaded salmon pieces into the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

              Serve: Once all the bites are fried, serve them hot with the Bang Bang sauce drizzled on top or on the side for dipping. Garnish with chopped green onions or sprinkle sesame seeds for added crunch.
