Ingredients

1 pound salmon fillets, skinless and boneless

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

1 teaspoon honey

Green onions, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Salmon: Cut the salmon fillets into bite-sized cubes, about 1-inch in size. Season with salt and pepper, and set aside.

    Set Up Breading Station: In three separate bowls, set up your breading station. In the first bowl, place the flour mixed with garlic powder and onion powder. In the second bowl, beat the eggs. In the third bowl, add the panko breadcrumbs.

      Bread the Salmon: Coat each piece of salmon first in the flour mixture, making sure to shake off any excess. Then dip it into the beaten eggs, and finally cover it with panko breadcrumbs, pressing lightly to adhere.

        Fry the Salmon Bites: In a large frying pan, heat about 1/4 inch of oil over medium heat. Once the oil is hot, carefully place the salmon bites in the pan in batches, being careful not to overcrowd. Fry for about 2-3 minutes on each side or until golden brown and crispy. Transfer the cooked salmon bites to a paper towel-lined plate to drain excess oil.

          Make Bang Bang Sauce: In a small bowl, combine the mayonnaise, sweet chili sauce, sriracha, and honey. Mix until smooth and well-combined.

            Serve: Plate the crispy salmon bites and drizzle generously with the Bang Bang sauce. Garnish with chopped green onions and serve with lemon wedges on the side for an extra zing.
