Ingredients

1 lb salmon fillet, skin removed, cut into bite-sized pieces

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

Vegetable oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tsp lime juice

1 tsp honey (optional for added sweetness)

Chopped green onions, for garnish

Instructions

Prepare the Salmon: Cut the salmon fillet into bite-sized pieces, making sure they are roughly uniform in size for even cooking.

    Set Up Breading Station: In three separate bowls, set up your breading station:

      - In the first bowl, mix the flour, garlic powder, paprika, salt, and black pepper.

        - In the second bowl, add the beaten eggs.

          - In the third bowl, place the panko breadcrumbs.

            Bread the Salmon Bites: Take a piece of salmon, dip it first into the flour mixture, making sure it's well coated. Shake off any excess flour, then dip it in the beaten egg, and finally coat it in panko breadcrumbs. Repeat this for all salmon pieces.

              Fry the Salmon Bites: In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat. Once the oil is hot (you can test by dropping a small piece of bread in; it should sizzle), carefully add the breaded salmon bites in batches, without overcrowding the pan.

                Cook Until Golden: Fry the salmon bites for about 2-4 minutes on each side, or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on a paper towel-lined plate.

                  Make the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey (if using) until smooth and well combined.

                    Serve: Plate the crispy salmon bites and drizzle with the bang bang sauce. Garnish with chopped green onions. Serve immediately while hot and crispy.
