Ingredients

  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons Cajun seasoning blend
  • 1 tablespoon extra virgin olive oil
  • 1 cup cooked jasmine rice cooled
  • ½ cup shredded carrots
  • ½ cup thinly sliced bell peppers red and yellow
  • ¼ cup chopped green onions scallions
  • ¼ cup fresh cilantro finely chopped
  • 12 pieces rice paper wrappers
  • ¼ cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • to taste salt and freshly ground black pepper
  • to drizzle sweet chili sauce

Instructions

  • Marinate the shrimp with Cajun seasoning, olive oil, salt, and pepper for 15 minutes.
  • Cook the marinated shrimp in a skillet over medium-high heat for 2-3 minutes on each side until pink.
  • Dip each rice paper wrapper in warm water for 5-10 seconds until pliable.
  • Place a spoonful of jasmine rice in the center of each wrapper.
  • Add cooked Cajun shrimp, shredded carrots, bell peppers, green onions, and cilantro on top.
  • Fold the sides of the wrapper over the filling and roll from the bottom to form a cup.
  • Whisk mayonnaise and lemon juice in a bowl, seasoning with salt and pepper.
  • Arrange the rice paper cups on a platter and drizzle with sweet chili sauce.
  • Garnish with extra cilantro and bell peppers for presentation.
  • Serve with lemon mayo dipping sauce.
