Ingredients

2 cups cooked chicken, shredded (grilled or rotisserie works great)

1 cup shredded cheese (cheddar, Monterey Jack, or a mix)

4 large flour tortillas

1 medium onion, finely chopped

1 bell pepper, finely chopped (any color)

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

2 tablespoons olive oil or butter

Optional: fresh cilantro, sour cream, or salsa for serving

Instructions

Prepare the Filling: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes or until the vegetables are soft. Stir in the shredded chicken, garlic powder, cumin, salt, and pepper. Cook for another 2-3 minutes until heated through. Remove from heat and set aside.

    Assemble the Quesadilla: Lay one tortilla flat on a clean surface. Sprinkle a generous amount of cheese over half of the tortilla. Next, layer some of the chicken and vegetable mixture on top of the cheese. Sprinkle another layer of cheese over the chicken to ensure gooeyness when melted. Fold the tortilla in half to cover the filling.

      Cook the Quesadilla: In the same skillet, add the remaining tablespoon of olive oil. Place the folded quesadilla in the skillet and cook over medium heat for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese is melted and gooey.

        Cut and Serve: Remove the quesadilla from the skillet and let it sit for about a minute before cutting it into wedges. Serve hot with fresh cilantro, sour cream, or salsa on the side.
