Ingredients

1 pound fresh mushrooms (button or cremini), cleaned and stems trimmed

1 cup all-purpose flour

1 tablespoon cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 cup buttermilk (or regular milk with 1 tablespoon of vinegar added)

2 cups breadcrumbs (panko for extra crunch)

Vegetable oil for frying

Fresh parsley for garnish (optional)

Instructions

Prepare the Mushrooms: Clean the mushrooms gently with a damp cloth. If they are large, you can cut them in half or quarters for even cooking.

    Set Up the Breading Station: In three separate bowls, set up your breading station.

      - In the first bowl, combine the flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper.

        - In the second bowl, whisk the eggs and add the buttermilk until well combined.

          - In the third bowl, place the breadcrumbs.

            Coat the Mushrooms:

              - Take each mushroom and first dredge it into the flour mixture, ensuring it's well coated.

                - Dip it into the egg mixture next, allowing any excess to drip off.

                  - Finally, coat it with breadcrumbs, pressing lightly to ensure an even and thick layer.

                    Heat the Oil: In a large frying pan or Dutch oven, heat about 1-2 inches of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test it by dropping in a small piece of bread; it should bubble and sizzle.

                      Fry the Mushrooms: Carefully add the breaded mushrooms to the hot oil in batches, making sure not to overcrowd the pan. Fry for 3-4 minutes per side or until golden brown and crispy. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain excess oil.

                        Serve: Garnish with fresh parsley if desired, and serve hot with your favorite dipping sauce such as ranch dressing, aioli, or marinara.
