Ingredients

1 lb fresh salmon fillet, skinless and boneless

1/2 cup all-purpose flour

1/2 cup panko breadcrumbs

1/4 cup cornstarch

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon paprika

1 large egg

1 tablespoon water

Vegetable oil, for frying

For the Honey Garlic Sauce:

1/4 cup honey

2 tablespoons soy sauce

2 cloves garlic, minced

1 teaspoon apple cider vinegar

1/4 teaspoon red pepper flakes (optional)

Sesame seeds and chopped green onions for garnish

Instructions

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes (about 1-inch pieces). Pat them dry with paper towels to remove excess moisture.

Set Up Breading Station: In one shallow dish, combine flour, cornstarch, salt, pepper, garlic powder, and paprika. In another dish, whisk together the egg and water. In a third dish, spread out the panko breadcrumbs.

Bread the Salmon: First, coat each piece of salmon in the flour mixture, shaking off any excess. Next, dip the floured salmon into the egg mixture, letting any excess drip off. Finally, coat the salmon in panko breadcrumbs, pressing gently to ensure they stick.

Fry the Salmon Bites: In a large skillet, heat 1/4 inch of vegetable oil over medium-high heat. Once the oil is hot (you can test it by dropping in a breadcrumb; it should sizzle), carefully add the salmon bites in a single layer. Fry until golden brown and crispy, about 3-4 minutes per side. Work in batches if necessary, ensuring not to overcrowd the pan.

Make the Honey Garlic Sauce: While the salmon is frying, combine honey, soy sauce, minced garlic, apple cider vinegar, and red pepper flakes in a small saucepan. Heat over medium heat until it starts to simmer, stirring frequently. Let it cook for about 2-3 minutes, until slightly thickened.

Coat the Salmon Bites: Once fried, transfer the salmon bites to a paper towel-lined plate to drain excess oil. Then, place them in a large bowl and drizzle the honey garlic sauce over them. Toss gently to coat all the pieces evenly.

Serve: Transfer the coated salmon bites to a serving platter, sprinkle with sesame seeds and chopped green onions for garnish, and serve warm.
