Ingredients

  • 2 pieces boneless skinless chicken breasts
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 1 large egg beaten
  • to taste salt and freshly ground black pepper
  • for frying vegetable oil
  • 2 cups rich chicken broth
  • 1 medium onion finely chopped
  • 2 medium carrots sliced into thin rounds
  • 2 tablespoons aromatic curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • for serving cooked rice preferably short-grain
  • optional chopped green onions or sesame seeds for garnish

Instructions

  • Season both sides of the chicken breasts with salt and pepper.
  • Set up a breading station with flour, beaten egg, and panko breadcrumbs.
  • Coat each chicken breast in flour, dip in egg, and then press into panko breadcrumbs.
  • Heat vegetable oil in a skillet over medium heat and fry the chicken for 4-5 minutes on each side until golden brown.
  • Remove the chicken and let it drain on paper towels.
  • In the same skillet, sauté onion and carrots for about 5 minutes until onions are translucent.
  • Add curry powder, stir, then add soy sauce, honey, and chicken broth. Simmer for 10 minutes until carrots are tender.
  • Slice the rested chicken into strips and arrange over cooked rice.
  • Ladle the curry sauce over the chicken and rice.
  • Garnish with chopped green onions or sesame seeds and serve immediately.
