Ingredients

  • 2 pieces boneless chicken thighs
  • 1 cup panko breadcrumbs
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons vegetable oil for frying
  • 1 cup Japanese curry roux
  • 2 cups water
  • 1 medium onion
  • 2 medium carrots
  • 2 medium potatoes
  • cooked white rice for serving
  • fresh cilantro for garnish, optional

Instructions

  • Heat 2 tablespoons of vegetable oil in a large pot over medium heat and sauté the diced onion until translucent.
  • Add sliced carrots and cubed potatoes, cooking for an additional 5 minutes.
  • Pour in 2 cups of water, bring to a boil, then reduce heat and simmer until vegetables are tender.
  • Stir in the Japanese curry roux until dissolved and simmer for another 10 minutes.
  • Prepare a breading station with flour, beaten eggs, and panko breadcrumbs.
  • Coat each chicken thigh in flour, dip in eggs, and press into panko breadcrumbs.
  • Heat vegetable oil in a frying pan and fry the breaded chicken thighs until golden brown and crispy.
  • Remove the chicken and let it rest on paper towels to absorb excess oil.
  • Slice the crispy katsu and serve over cooked white rice with curry sauce on top.
  • Garnish with fresh cilantro if desired.

For a crispy finish, ensure the oil is hot before frying the chicken.
