Crispy Rice Salad with Veggies and Peanut Dressing

Ingredients

2 cups cooked jasmine rice (preferably day-old for crispiness)

1 cup bell peppers (red, yellow, and green), diced

1 cup cucumbers, diced

1 cup carrots, shredded

1/2 cup red cabbage, thinly sliced

1/2 cup green onions, chopped

1/4 cup cilantro, finely chopped

1/4 cup roasted peanuts, crushed (for garnish)

Salt and pepper to taste

Cooking oil (for frying)

Peanut Dressing:

1/4 cup peanut butter

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1–2 tablespoons water (to thin)

Instructions

Prepare the Crispy Rice:

    - Heat a large skillet or frying pan over medium-high heat and add a splash of cooking oil.

      - Once hot, add the cooked rice, spreading it out in an even layer. Press down slightly to help it crisp up.

        - Cook undisturbed for about 5-7 minutes, or until the bottom layer is golden brown and crispy.

          - Gently flip the rice, breaking it up and allowing other parts to crisp up; this should take another 5 minutes. Once done, remove from heat and let it cool slightly.

            Make the Peanut Dressing:

              - In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, and water until smooth. Adjust with more water if necessary for desired consistency.

                Assemble the Salad:

                  - In a large mixing bowl, combine the crispy rice, diced bell peppers, cucumbers, shredded carrots, red cabbage, green onions, and cilantro.

                    - Drizzle the peanut dressing over the salad and toss gently to combine. Season with salt and pepper to taste.

                      Serve:

                        - Transfer the salad to serving bowls or plates. Garnish with crushed roasted peanuts on top.

                          - Enjoy your refreshing and crunchy crispy rice salad!
