  • 1 cup creamy peanut butter
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini Reese's peanut butter cups roughly chopped
  • Additional mini Reese's cups for decoration

Instructions

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter, peanut butter, brown sugar, and granulated sugar until smooth and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Fold in the chocolate chips and chopped mini Reese's cups.
  • Scoop generous portions of dough onto the prepared baking sheets, leaving space between each cookie.
  • Press a mini Reese's cup into the top of each cookie dough ball.
  • Bake for 10-12 minutes until the edges are light golden brown.
  • Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

For best results, do not overmix the dough.
