Ingredients

1 cup pitted Medjool dates, chopped

1 cup hot water

1 teaspoon baking soda

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup chopped walnuts or pecans (optional)

Powdered sugar for dusting (optional)

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    In a small bowl, combine the chopped dates, hot water, and baking soda. Let it sit for about 10 minutes until the dates soften and the mixture thickens.

      In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 3-4 minutes.

        Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

          In another bowl, whisk together the flour, baking powder, salt, and cinnamon.

            Gradually add the dry ingredients to the butter-sugar mixture, alternating with the date mixture, starting and ending with the flour. Mix until just combined.

              If using, gently fold in the chopped walnuts or pecans.

                Pour the batter into the prepared cake pan, smoothing the top with a spatula.

                  Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

                    Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

                      Dust with powdered sugar before serving if desired. Slice and enjoy your delicious date cake!
