Ingredients

  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • ½ teaspoon peppermint extract
  • 1 cup crushed chocolate wafer cookies
  • ½ cup mini chocolate chips
  • ¼ cup cocoa powder
  • a pinch sea salt
  • optional fresh mint leaves

Instructions

  • Heat the heavy cream in a medium saucepan over medium heat until simmering, then remove from heat.
  • Add the semi-sweet chocolate chips to the hot cream and stir until melted and smooth.
  • Stir in the peppermint extract and a pinch of sea salt until well combined.
  • Allow the mixture to cool to room temperature, then refrigerate for about 1 hour until firm.
  • Scoop out portions of the chocolate mixture and roll into smooth balls.
  • Mix crushed chocolate wafer cookies and mini chocolate chips in a shallow dish.
  • Roll each truffle in the cookie and chocolate chip mixture to coat.
  • Optionally, roll some truffles in cocoa powder for added flavor.
  • Arrange the coated truffles on a baking sheet lined with parchment paper and refrigerate for 30 minutes.
  • Serve chilled or at room temperature, garnished with fresh mint leaves if desired.
