Ingredients

1 cup rolled oats

1 cup unsweetened almond milk (or any milk of your choice)

1 ripe banana, mashed

1 tablespoon chia seeds

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon maple syrup (adjust for sweetness)

1/2 cup chopped pecans or walnuts (optional)

1/4 cup raisins or dark chocolate chips (optional)

Instructions

In a medium mixing bowl or jar, combine the rolled oats, almond milk, mashed banana, chia seeds, vanilla extract, ground cinnamon, and maple syrup. Stir until well combined.

If desired, fold in the chopped nuts and raisins or chocolate chips for added texture and flavor.

Divide the mixture evenly into individual jars or containers with lids.

Seal each jar tightly and refrigerate overnight (or at least 4 hours) to allow the oats to soak and thicken.

In the morning, stir the oats well before eating. You can add a splash of milk to adjust the consistency if needed.

Top with sliced banana, an extra sprinkle of cinnamon, or additional nuts and enjoy your delicious banana bread overnight oats!
